How do you cook Ostrich?
As title ....... they look like beef steaks but it's a bird - so, does it need to be cooked well through or can it be rare?

Ostrich meat is very lean and high in moisture content.
Overcooking ostrich meat will dry it out and reduce its tenderness. Cooking only to medium or medium-rare produces the best results.

Like a good peice of rib-eye: Lot's of heat and cook quickly, to sear it on the outside and not allow it to over-cook and dry out.
If you can find some reciepes I can reccomend trying it with a home made apricot mustard

It's all in the cooking - overdo it and it turns like shoe leather very quickly. But get it right and... well, suffice to say, this was one of the best meals I've ever had, at a restaurant in Oudtshoorn, South Africa - the 'ostrich farming capital of the world'
