I stayed at the New York New York, Nice hotel.
The only down side to Disney Land Paris is that its in France.
The french are rude and dont mind Que jumping.
Have you looked in to America, not that much more expensive, but has to be 4 times the size easy !

I too have stayed at Hotel New York (about 5 years ago). Went for 2 nights - turned out to be a pretty expensive trip tbh. Wouldn't go again.
Found this, it might help you.

I went around Easter and with 9 members of our family over 3 generations, and all of us had a great time. The Eurostar directly to and from the park is a great way to travel.
We stayed in the budget Santa Fe hotel wich is like a travel lodge, clean and full of council house tennants. If you avoid eating there then you'll be fine.
Eating out is expensive, but very enjoyable! We went to Cafe mickey and had dinner with the disney characters, it's amazing to see the effect of beer, adults, and people dressed as Disney characters I'd like to eat at the Wild West show if I went again.
I didn't think I would enjoy the parades or the shows, but I did. In fact I think I enjoyed it more than the kids, I loved it
