Barbequing - what to eat with the meat?
Right then, BBQ season is in full swing and I've no problems with the main content of the meal - spare ribs in chinese bbq sauce, jamaican jerk chicken, prawns marinated in garlic and lime, trout, duck, spicy beef, pork chops etc. etc. but what to eat with it? Fed up looking at baked potatoes with chive sauce or even a tomato and mozarella (with basil) salad, cold rice and taboule. Any suggestions?

You can't go without a quality home made coleslaw.
White cabbage, white onions, red onions, carrots with lashings of mayo, thousand island and salad cream

Just spotted a good 'un, corn on the cob. Just wrap it up with some butter and bung it on for 20-30 minutes or so. Wash down with copious amounts of alcohol.

Can't beat home made potato salad. Coleslaw is allways a good side dish. IMO nothing beats a nice FRESH salad with plenty of Lollo Rosso lettuce, some nice hot raddishes sliced thinly and mixed in, on the vine tomatoes (home grown is best though), Cucumber, feta cheese and a salad dressing of your choice. I had a very nice bean salad once made with fresh french beans (whole pod kind) with other beans (podded) mixed in. It had an olive oil and lemon based dressing with garlic thrown in too and it was fantastic.

Dessert :)
Wrap an unpeeled banana in foil and BBQ. Split open when cooked and serve with selection of raspberries, strawberries or redcurrants and a scoop of ice cream and drizzle generously with raspberry sauce

I'm definitely going for the corn tonight, my daughter loves the stuff so she'll be over the moon. Might do some more for her birthday party on Sunday I'll bet all the kids would go for it.

... and I sometimes knock up a mango and avocado salsa to go with chicken. Mango, avocado, some red onion, little bit of chilli, lime juice, red wine vinegar, olive oil, salt, optionally a dash of tabasco and finely chopped mint

That would be right up my street but a bit hot for the kids. I've got some coriander handy and bucketloads of chillies and chilli powder soI might just give that a try a bit later on. Thanks!

veg kebabs. If using wooden skewers remember to soak in water the night before (you would be amazed at how many people forget this bit). Roughly chop peppers (all colours), red onion, courgette, those baby corn on the cob things and sun dried tomatoes (in oil). Arrange them on the skewers using each pice of veg intermittently and brush with the oil from the toms (not too much or the oil will just drip onto the coals and large flames will follow). Cook as per kebabs making sure that the edges have caught slightly. Serve in a bowl with the skewers removed and the veg mixed in with plenty of garlic and chilli infused olive oil.

Variation on the banana theme - make an incision along the inside of the bend of the banana and push in a few squares of chocoalte - and then wrap it all in foil and BBQ it.
Variation on spuds - get some new potatoes and chop them into wedges, toss them in a bowl with about a desert spoon of olive oil and seasoning (salt/ stock cube/ piri piri etc) Spread them on a baking sheet and pop in a reasonably hot oven (gas 7) for 45 mins - hour. Healthy too!
Def another vote for home made coleslaw and potato salad. I find making the coleslaw at least half a day ahead of when I need it is best - gives everything a chance to 'bed in'.
Enjoy!

Rice salad - italian long grain, with chopped up olives, sweetcorn, roasted peppers, pepperami, spring onions etc.
Great thing about this is that we always make too much - and it tastes great fried the next day
