Whitebait ...... how do you cook it??

I have just heated up a frying pan of oil and poured them in - expecting them to go all crispy like in the best eating places ... just turned to mush!

They were frozen - the oil was hot but not red hot ..

What have I done wrong?

Should have used petrol instead of oil

i think you should have defrosted them, let them come back to room temperature, rolled them in flour and fried them in hot oil

let them thaw out. toss in seasoned flour (maybe with some cayenne pepper). THEN fry in plenty of oil very briefly! that'll get them crispy and damn tasty!
dont forget to eat with lemon wedges and some nice crusty bread and butter!

Yep, flour and fry. Only do a few at a time otherwise the oil will cool too much.

or deep fry, very, very quickly
