Cheat - get yourself down to Tesco/Waitrose and buy a Betty Crocker Brownie mix, and add chopped walnuts.

Oil and line a 11x8in (28x10cm) baking tin, or non-stick baking parchment.

Preheat the oven to 190C/375F/Gas Mark 5

10oz plain chocolate broken into small pieces
6oz milk chocolate roughly chopped
7oz butter
3 eggs
7oz light muscovado sugar
3oz self raising flour (yes just 3oz)
6oz walnuts OR 6oz white chocolate roughly chopped
a few drops of vanilla extract (optional)

Place the plain chocolate in a small bowl and either melt over a saucpan of water or in the microwave. Add in the butter stir until butter melts.

In another large bowl beat together the eggs and sugar. Stir in the melted butter and chocolate. Stir in the flour, chopped chocolate/nuts and vanilla extract until the flour is just mixed. It doesn't need a lot of beating.

Pour into the tin and bake for about 35-45 mins until the crust feels just firm but it is still soft underneath. A skewer will not come out clean in the centre. Take care not to overcook as the brownies will be dry.

When cool turn out and cut into squares.

Store in an air tight tin.

American Brownies
(Makes 15 squares)

1. Butter (110 g)
2. plain dessert chocolate (50 g)
3. 2 eggs, beaten
4. granulated sugar (225 g)
5. plain flour (50 g), sifted
6. 1 teaspoon baking powder
7. ¼ teaspoon salt
8. chopped nuts (110g) – these can be walnuts, almonds, hazelnuts or Brazils or a mixture

Pre-heat the oven to 180C.

Prepare a baking tin measuring 18x28 cm, well-greased and lined with greaseproof paper. Bring the paper up at least 5 cm above the rim of the tin.

First of all melt the butter and the chocolate (broken up into small pieces) together in the top of a double saucepan (or else place in a bowl fitted over simmering water on a very low heat). Take away from the heat, and stir all the other ingredients into the butter and chocolate mixture thoroughly, in the order:
1. Sugar (to dissolve)
2. Eggs (to cook)
3. Pre-mixed flour + baking powder
4. salt and nuts
then spread all this in the lined tin.

Bake in the oven for 30 minutes, until the mixture shows signs of shrinking away from the side of the tin, and the centre feels springy. A knife inserted in the centre should come out cleanly (but don’t overcook – it will firm up as it cools). Then leave the mixture in the tin to cool for 10 minutes before dividing into approximately fifteen squares and transferring them to a wire rack to finish cooling.

BTW, I had this to hand as I've had to type it out and give it to almost everyone who's tried ours - I think that says something!
