odd way of coming across!!
thought it would be much more cooking,,
gobsmacked over geese!!
never realised the meat was almost like rare/ cooked beef in colour, not sure about the layer of fat on the outer,
never tried it, any comments on the taste

Goose is a much richer taste than chicken - more akin to duck. Buy a decent goose and cook it properly and it certainly doesn't taste fatty. The crispy skin is also absolutely delicious, but probably cardiac arrest central if you eat too much of it.

Chalky is retiring soon, so you've no doubt seen the last of him now.
Good prog. I used to hate Rick Stein but have to say, since watching his French canal trip, am hooked. He has a very laconical way about him and his cooking is very down to earth.
It's wonderful to watch someone so passionate about food and cooking.
