What happens when the MOT has expired? I have a few days to decide whether to put my Land Rover to bed for the winter or get it a MOT certificate. Can I still drive it to the MOT station?

yes, but only if you have a pre-booked test. You would still require insurance whilst on the road, plus you must have road tax or declare the car on a SORN or you are liable to a fine.

What about a car that is SORN'd and has no MOT and is being run in
My 205 is ready to run now, just insurance to sort then it needs taxing and MOT'ing, but I need the MOT before I can tax it. Am I ok driving to the MOT station without tax?
It also needs running in to add to the problems, so I need to go to the MOT place without idling for long periods and sticking below 4000rpm

If you pre-book the MOT test you're OK to drive it to the testing station. If you just run around for a week or two before the MOT, then the cops are liable to report you to the DVLA.
They'll check to see if the car should be SORN'd or taxed. If there's a gap in the tax then they can fine you and get you to pay the backdated tax amount.
Now that it's all computerised you can tax the car online as long as your MOT is one of the newer computerised ones. Your V5 and Insurance are automatically checked to see if they are valid.

Be prepared for a huge queue of blue rinses all wanting to do something outrageously time consuming that could otherwise be done elsewhere. Once you get to the front of the queue expect the jobsworths to come up with a 'new rule' which means that they can't issue you with your road rape tax and then expect to be sent to the back of the queue.

It would seem that car tax is now optional judging by the ever increasing numbers of people that don't bother with it.
What really annoys me (I know it's a vehicle and not a road tax) is that the money doesn't get used to build more / better / safer roads or even improve public transport. All are woefully inadequate and underfunded and yet the take from the motorist has never been higher (SWAG).
