I did this a few times in Canada. Keep all your bills, then either in a major tourist office or even at the airport you'll find free forms/envelopes from someone like their tax ministry that ask for the receipts and basic data, like your address (where they should send the cheque) and/or your bank a/c details where they can transfer it. IIRC there was a booth in the airport for a private company where they would give you the cash immediately, but they took a minimum amount or percentage as commission, which can be quite a chunk. I posted the stuff off to the tax dept instead and got a cheque for the full amount about 3-4 mths later. You won't end up rich - I spent 3.5k on a ski holiday and might have got 300 quid back - but it's OK for 5 minutes of form-filling.
