Lots to do see in Manhattan. Obvious one's of Empire state and statue of Liberty. You could do one of the TV tours Soprano's etc.
Lots of goods clubs/bars restaurants. Reccomend Peter Lugers in Brooklyn. Speciality steak restaurant voted best in New York for last 20 years. Would definately need to make a booking before going.
In terms of shopping pretty much everything is good to buy especially with current exchange rates.
Electronics such as Laptops, digital cameras, camcorders, mp3 players etc are all excellent value. You can vistit stores in person or order on web and have it delivered to yor hotel (they have no problem doing this I have done this with Amazon and other vendors). Brands like catterpillar/Timberland lot cheaper than here. A sears store is a good place to get these
Clothes depending on your tastes are very good value. Shops such as Gap, Banna Republic Abercrombie & Fitch. If you get the cance buy these in the out of town discount arm of these stores as they sell the same clothes but at lower prices. If you want more performance clothes skiing/climbing etc the someone like Campmor.com are good value. Located in New Jersey about an hour from central Manhattan on I95 but can also deliver as above.
If you have a car and are staying throught the weekend then a trip to Franklin Mills shopping mall (the largest in the US apparently) would be worth a visit. About two hours south of Manhattan with lots of discount stores. Also on route another huge shopping mall called King of Prussia caters to more upmarket designer tastes.
Last of all Jewelry is good value. Watches such as Rolex Breitling anything up to half the price of UK. Will be able to haggle on price even in authorised sellers. One final trick if you are visiting another state and you buy something high in value laptop watch etc then have it shipped from one state to the other and you avoid about 10% sales tax.
