Need some help writing a will!

hello all,
I promised my fiance that I'd write a will earlier this summer - we own an apartment in Amsterdam and would hate to leave a lot of loose ends if I popped my clogs...
I'm off to US/Caribbean on business tomorrow, have left it too late to do a commercial Will thing - surely it is a simple document if I want to leave everything I own to one person..
Any tips about what MUST be in there to make it a legally sound document? Need some feedback pretty soon as I need to do it before I leave (9.40am flight tomorrow!)
