What can I do as a birthday treat?

My 30th birthday is at the end of January (can I turn the clock back a few years?) and now it is time to book something to do.
I would like to do something special, that I am not likely to repeat in the future (to make it more memorable), but need some help with ideas.
Something not car related would be preferred as I spend too much time in that area (and did a car thing for my 25th), unless someone can think of something really different.
I looked at Red Letter Days and similar, but nothing stands out.
I liked the idea of staying at the ice hotel in Sweden (as that would be unique and not repeated in the future), but sadly its a little too expensive.
I think I am also limited slightly by having a birthday at the coldest time of the year, so outdoor things may not be possible.
I welcome some ideas (please)

IIRC Red Letter days did a day out where you get strapped to a pole on top of a bi-plane!! it would scare the bejeesus out of me but I'd love to try it!!

Hang Gliding!? or if that's too cold, how's about going up in a glider? meant to be a pretty surreal thing to experience? Shouldn't cost the earth and with what you've got left over, do a days rally tutition in a Scooby?

i dont want to do parachute jump or hang glider as the goggles would probably steam up. Some of the flying things are limited to summer only.

Ever tried climbing or skiing?
£400 would buy a French guide for the day - I'm sure the guide could come up with an interesting climb or ski!
Alternatively pay me twice that and I'll guide you.
