one thing ive done before - but i warn you...its very boring and kinda tasteless...but i got it from a diet book so....
start to cook the marrow - grill
scoop out the flesh and mix it together with some onion, sweetcorn, cream cheese, and peas -
then put the mixture back into the marrow skin and grill until cooked.
i guess you could add anything you wanted with it....tuna might be quite nice.

I thought stuffed marrow was easy, just cut it in half, scoop out the seed, and refill with mince, bolangese style. Bung in the oven until cooked.
Mind you as has been said marrow itself is possibly over rated, being somewhat tasteless, hence the need to stuff it in the first place!
You could just do boulangese or whatever, cut the marrow into chunks, roast it and have it as a side vegetable.
