How are police stings organised?

This is something I've wondered about for a long time.

When the 'authorities' plan a sting, ie. sending someone (like a police officer) to jail or sack them from the force BUT where they are actually undercover, how is that actually done?

I.e. A supposedly bent copper goes to jail. He has to pass through the CPS, courts, prison system, presumably with fabricated evidence, etc.. all along the line.

Once the 'sting' is complete, that suppoosed conviction has to be purged from the files, etc.. How can such a thing work successfully within the current structures

they just show up at the front door of jail with the paperwork. If you can buy a hookey passport for a tenner, jail doc's must be fairly easy. No-one is going to double check for forgeries anyway. That would be a bit like telling the taxman you actually earned 50 grand more than you really did...
