Not engine bay ones, you have to be very careful as stainless doesn't have the tensile strength of ordinary steel, so some could be replaced, while others not.
I've replaced all those holding my skirts on with stainless roofing bolts, and the HID driving lights with stainless security bolts.
I have to admit that ALL bolts on my MTBs are either stainless or Ti, and I've been doing that for about 10 years!
I don't polish the stainless ones though
