Default Cooling fans

Having removed my radiator, i wish to change the fans for some spal type, have noted there are 3 cables on the OE loom, can any body tell me what the 3 cables do, ie +, -, and the 3rd one, ??? also there are only 2 cables on the spal fans.

Standard fans could be two speed, earth, 12V for fast, 12V for slow.

Three options to wire the new fans to the old wiring. Easiest wire them together so that the new fans run fast when the car asks for either fast or slow. Next add an external resistor in series with the slow so the fan sees less than 12V and runs slow. Final options is the most elegant, use some relay logic so that the two fans are wired in series on slow and parallel on fast.
