Turn key to ignition lights and on to turn the engine over, however it doesn't seem to spark until you start to release the key. Then it kicks in and runs fine.

Fuel pump is working correctly, and the coil obviously sparks well for it to run..

Any one got any ideas why this may be happening???

Sounds like the ignition barrell may be worn mate.
ie the switch gear behind it
