anyone got any tips on improving the rather poor sound deadening of the Impreza (MY00). Motorways are harsh!

I fitted the BJ Acoustics kit and it made a huge difference. Mind you I wouldn't buy the whole kit, it is not really that useful under the bonnet, but the boot, door pannel and cabin parts are very good. All cut to shape and a doddle to fit.

For a quick (inexpensive) fix - cut some carpet underlay to shape and fit it under the rear seat, under the carpets in the front and rear foot wells and under the carpet in the boot - if you use decent quality underlay it makes a surprising amount of difference.

Used them before for ny MX-5 highly recommended!
Not looked recently at what they can do for a scooby, but they can cut the sheet to any size or shape you want
