If a Decat is illegal how are you meant to insure it?

If a Decat is illegal how are you meant to insure it?
I randomly thought about this today. If someone was running a decat they are technically breaking the law as they don't meet MOT emissions. If they are illegal I'm assuming you can't add it to your mods on Insurance policies? Therefore...people who declare all mods to their insurance are wasting their time if they don't declare a decat? Is that correct?

Just had mine down as a full H&S turbo back stainless steel exhaust system. Not mention of what cats it did or didn't have.
Technically you don't have to have catalytic converters on your car so long as it meets the emissions requirements by some means or another
