Where can i buy the blanking plate to install a normal sized head unit into the MY02 WRX?

You have to give your vin number to a dealer, then theyll get one for you. They are available as an OEM part, so should be listed on most dealers databases. Only costs about £25 and you get somewhere to put you sunglasses.
