How hard to remove the standard double din unit?
Is there a step-by-step guide on removing the standard double din?
Basically do I have to take some of the dash out in order to get it out?

I presume you have a newage. If so all you need to do is open the cup holder and gently but firmly pull the surround away.Work round the edge as it comes away, it takes a couple of minutes on my bugeye then once it is removed you will see the screws that secure the radio frame to the dash (6 if I remember correctly).
