I am about to remove my double size addzest, radio/cassette and CD player units, to replace them with a standard single din uk cd head unit, in the space that remaims i would like to put a turbo boost guage and clock, are there any off the shelf panels i can buy for this, and simply slot the guages in? or will i have to bodge it myself, if so any ideas. thanks

You will almost certainly have to make something up yourself for the gauges. Note that standard size gauges won't fit.

Also you should be able to fit a modern head unit in no problem (without it's optional surround).
Fitting a pull out is a pig and will require some cutting.
