Should an Oil Catch Can be baffled or chambered?

Should an Oil Catch Can be baffled?
Looking to get a 3 port catch can with return to sump, most are not internally baffled/chambered. Is this very important or can it be just open inside? The breather system on the car I just bought is VTA breather & I would prefer a catch can for the odd trackday. I use the car daily & am soon to do a few mods & get it mapped again.

The baffling adds internal surface area for the oil mist to condense onto and separate.
Very important IMHO to have baffling - preferably stainless steel mesh rather than a solid wall, but not Brillo pad as it breaks up and can enter the engine.
If the tank isn't catching oil then it either the engine isn't being pushed hard enough to create a hot oil mist or the tank is just a poor design.

Can I just ask, as this is new ground for me, if there is no oil catcher, would this 'hot oil mist' vent to atmosphere ?
I do a few trackdays, and notice on the long straight that a puff of vapour escapes from the RHS bonnet vent between gear changes, say 3rd -> 4th, and 4th -> 5th at full throttle.
I presume this IS oil mist ??
Where would it vent from ??

The car's in the (SN) garage.

Not sure if you can tell from the picture, but you can see a few things in the engine bay.
I need to look at the physical engine, I can do that tonight when I get home from work.
