heater matrix if your getting a leak inside, but if your getting a leak in the engine bay as well it'll be caused by the system overpressurising which will stress the cooling system finding the weak points(matrix)

Head gaskets would be an obvious suspect Rob. Combustion pressure leaching into the cooling system will force coolant out via the pressure cap into the expansion tank, and as Mike says, will soon find and exploit any weak points elsewhere.

Check the front passenger footwells/carpets for signs of moisture - and have your coolant checked for signs of hydrocarbon contamination. Don't just fill it up with water either, 50/50 coolant/water mix.
