Default Hesitation?

I had my 04 wrx fully serviced yesterday hoping that would cure a problem i've had for a couple of weeks but it didn't.

When sat at motorway speeds and planting the throttle the car hesitates and slowly picks up speed (lumpy)

also mid - top end it's the same

i had the plugs changed yesterday so i'm thinking it could be either

poor fuel - i have been running on 95ron but changed to Ultimate on this tank

maf - i was told it could be this (is there a way of checking?)

fuel pump?

the car has done 39k so i wouldn't expect anything to be worn out

any ideas?
