Default Water temp on the up???

Hi all,just a quick question.
Was doing a trackday round oulton park yesterday (loads of fun!!) and found that later on in the day after comeing off the track and leaveing it ticking over for 10 mins to cool down for a while, that the water temp would start to go up.Not into the red but fairly high.I checked all the fan fuses to make sure they were all in tak so wasnt a problem there. After it had cooled down I topped it up with water,it took half a litre but was still doing it after each time I came in and in traffic lights on the way to getting petrol. Its kept its temp perfectly on every other trackday Iv done and ever since Iv had it,runs just over quater.Do you think it could be a dodgy thermostat somewere as when the water temp reads high feels fairly cool under the bonnet. It was fine round track when cool air blowing over it but just when it comes to a stand still.Any thaughts will be most gratefull thanx v much.

p.s it was a standard WRX but now with VF34 turbo,Ecutek ecu (mapped to 305bhp) and full De-cat exhaust (pops like a biatch ) But should these make any difference?

heres a pic too

Take the thermostat out and put in to some hot water (with a thermometer) and see if it opens at the right temp.
