How much difference is there between mild steel and stainless steel headers?

If the designs are the same, the performance will be the same.

Mild steel tends to be a "little" quieter, because it doesn't resinate the same as SS.

Mild steel will rust, but it's probably a little more resilient to cracking at very high temps.
