Default Fitting Gauges

Can anyone provide some info or a guide on how to go about this. I have a boost (thats the easy one) and then oil temp/press + water temp.

I have the gauges and a couple of sender bits. Any info appreciated.

also as per the pic below, i understand there are 2 places to fit the oil sender, can some1 shed some light on this ?
