Oil pressure at tick-over
Sitting in traffic this morning my pressure was around the 2.5 bar mark (defi is set at 2.5 so red light came on a few times). Pressure is normally reading around the 6-8 mark when on the move. Is this okay?

Sounds fine. My Defi alarm is set to 2.0. You'll notice a difference hot and cold too.
The oil pump pressure is directly related to engine speed until the oil relief valve takes over and limits it going too high.
Regards,
Ian
