The chances are either the ABS sensor has got disconnected somehow (possibly by the cable breaking internally), or the sensor isn't in the right position (I don't know if this is possible as I have never removed mine). Try carefully feeling the cable to the sensor - you may be able to find where the break is if there is one.

you might also want to check the exciter ring to see if it has been damaged while replacing the wheel bearing
Also some wheel bearings have to fitted the correct way round or the abs wont work

it doesn't matter what way round the wheels bearing goes and its located in place by a 12mm bolt so it can't go anywhere else. the other ideas are good though either it's broken internally which is quite easy to do or the exciter ring is missing bit harder to do that one though or it's not connected.

Does removing the fuse disable the ABS system completly?

if the ABS light is on your ABS system will be deactivated and it will be ok to use the car. Some makes of newer cars must have the wheel bearing fitted the correct way round for the abs system to operate correctly
