When the oil is hot, my oil pressure is 6Bar when running and just over 2Bar at idle.

Sounds about normal. Obviouslly it depends on the viscosity of the oil and the actual temperature.

when I changed to Motul, I gained 1/2 a bar at idle pressure (now 2.8/3.0 bar) and a bit at working pressure (now 6.0/6.2 bar), my peak values are scary though (only hit it once but), 8.95bar

Motul 15 50 during the Winter will give far higher pressures than say 10 40 and during the Summer pressures are likely to be lower generally and particularly noticable on start up. When the oil is cold, even on a 5w30 I keep below 2500 rpm to avoid high oil pressure ie. 110 psi plus.
