Tek3 on 02WRX would the dealer know?
I stand to be correct, but AFAIK you can only Tek and MY99/00, STI 5/6 and Forrester ECU.
The new age remaps were still in development last time I heard anything.
Anyway, to answer your question in a round about way - the ECU reports the same model# it std form and when re-mapped. So, take an AE801. It will still report itself as an AE801 when the Dealer puts it onto the Select Monitor.
What would give something away is the boost. If you up the boost, then the Dealer would suspect something. If they looked at the ECU, they wouldn't see any difference - they'd need some software to read the ECU parameters to tell that it'd been changed.

Hmm, not sure. You still get fuel cut with the Dawes, so the ECU still has control. Whether the ECU is reporting the correct boost - I don't know. In saying that, when I've been with someone running the Delatdash software, that reported the true increase in boost from a Dawes, so I guess the answer is Yes.
They'd certainly spot it in the Engine bay and they'd only need to drive it to see the difference.
If you want to stealth it, then take it off before handing it over to the Dealer. It's a 5-10min job once it's setup anyway.
