Default Stage 4 Paddle or Stage 3 Organic clutch? Benefits?

I'm looking to upgrade the clutch on our Blob STI to a Competition Clutch Stage 3 or Stage 4.

Had a very brief try of a car with a stage 4 in it and once I'd moved off from a stop a few times I didn't find it too bad, but I can imagine it is quite annoying in traffic.

I can't see the car ever going past 500bhp max so the stage 3 is probably OK but I would like a bit of informed opinion. It will see a lot of track and hillclimb type use.

What are the benefits to the 6 paddle other than obviously being able to take more power?
