Default Can you have too much cooling?

Simple question really.
I have the room to put 2 rads in, thermostat controlled is there a reason why I shouldn't? Given the following:-
  • V2 Turbo Impreza, de-cat, open exhaust, extra intercooler and remote oil cooler.
  • Rear engined vehicle, so no natural air flow.
  • Acres of room to put the rads in with fans.
  • Weight not an issue.

the rear engine bit is the question mark, no idea how much extra heat it will generate

From the oil side of things, if the oil is too cool, some of the additives do not work properly and it won't flow as well as it should.
