Keep an eye on your knock correction, if you see negative values you need to find out why and check the IAM figure - the rest is just pretty

It reads 0.0 at normal idle and backing off and then goes to a max of 8.0 positive under full throttle.

What should my MAF reading be?

What should my Lambda reading be?

You need to sit with someone who has experience of the unit and go through the menu options, set warning values and generally give some clues as to typical readings.
Air flow should be around 3.5 - 4 g/s at a typical 750 rpm warm idle. Obviously increasing with revs.
Lambda (depending on the scale you've set) should be 14.5 - 14.7:1 off boost, going richer as you build boost (accelerating)
If you were anywhere near Romford you could pop round and go through the menu!

You can call me anytime mate.. ive got another 6 meters about to go in mine bringing the total to 9

No more multimeter lo.. but its been worth its weight in gold considering its saved me from a possible melt down on high speed runs
