Something I saw when browsing - looks like a CO2 or Nitrous intercooler spray system....

Any compressed gas will have a cooling effect when released as you will notice when spraying on an aerosol deoderant. Nitrous and CO2 are presumably used as they already sell bottles of these for other purposes.
I think the gas with the best cooling properties when used this way should be the one with the greatest Latent Heat of Vaporisation.
