Oil coolers with or without thermostat ?

Has anyone had any experience of running an oil cooler with out a thermostat?
I have just bought a mocal kit from demon tweaks and it was supplied without a thermostat, i'm not very happy with the possibility of the oil not reaching correct working temp.
should i get a thermostat?

Anyone got any ideas?
