When repleacing worn parts such as brake discs/pads for eg, does the work need to be carried out by subaru or can i get an alternative specialist to fit the parts instead without upsetting subaru or causing problems with the warranty??

if its still within warranty and you want to keep it within that warranty, i think its only to be done at a dealer.
