delema?remove cats or not?

ime in a bit of a delema,ive got a manual legacy gt estate,recently i changed the back box to a powerflow stainless unit,and am chuffed with it,but i am looking into removing both cats to improve performance and to sound nicer still,but i dont want megga noise as its not the type of car to have a loud exhaust if you get what i mean ,or is it??????????
has anybody had dealings with de-catted legacy's ???

ps,,does anyone have any ideas on how to fit 2 atmospheric dump valves to replace the re-curculating type ?,,
