Are you talking about the hard drive or the actual RAM in the 360?
As far as I'm aware you cannot easily upgrade the RAM, nor do you really need to. It's not like a PC where more RAM will help and a PC can be easily upgraded. Games would probably not use any additional RAM if you could get it onto the 360.
If you are talking about the actual hard drive, have a read of this. There is also a video detailing what to do. It will void your warranty however and does require taking your xbox apart.

If its a hard drive your on about then i would get one as big as possible so you can save your games on disc to hard drive, by playing them from the hard drive it will prolong the life of the optical drive and keep your discs in better condition, its cheaper to replace a hard drive than it is an optical drive. Thats just my opinion, their will be people more clued up on gaming than me that will offer you some advice.
I bought one with a 250GB hard drive for the reasons above.

I bought the 120gb one and half of it is gone......
I was religious about keeping the 20gig one tidy when i had one of them, but NXE with its install to HD feature is a godsend on the well played games.
My GRAW2 folder with installed game + all DLC comes in at about 9.5gb on its own

I only install the game to HD if its a regular game i play, the majority of my games are traded in when completed, i have maybe 10 games that i kept as "keepers" and maybe half of them are installed as they are the games i play for long periods of time
The rest of mine is downloaded DLC and arcade titles (they sure are increasing in size nowadays)

I don't install games anymore to mine unless it says you have to (Like Forza 3). I didn't really notice that much difference between playing it from that or from the CD. I've a 20GB hard drive and currently have half of it still free!

I recently upgraded my original 20GB drive for a 120GB off an elite unit. Cheapest place I could find was CEX that sold 'em for £55 (used but excellent condition).
6 weeks later, my bro bought a second Elite package...
