I'm using one of these at the moment for Sky+/PS3/360, works just fine
3 WAY OPTICAL TOSLINK SWITCH SELECTOR SPLITTER Digital on eBay, also Interconnects Terminated, Cables Connectors, Home Audio Hi Fi, Consumer Electronics (end time 13-Jan-09 23:48:47 GMT)
I have one of the unswitched 2 way ones which worked fine too, but some devices emitted a signal when on standby causing issues.

With PS3 and 360, I'm pretty sure you'll be fine with unswitched. If I recall, it was the Sky box or my DVD recorder that was constantly emitting. Just poke a finger in the optical socket to check for light
