Yes. On my LCD, the component cables provide a much more vibrant picture with better colours and sharper edges. The one issue is the increase in quality can also show up the flaws more - Wii sports for example. Mario Galaxy however looks worlds apart from the composite connection.

Remember anything with an "i" after it, in this context, means interlaced. Interlaced is an optical illusion if you like. 576i mode is NOT displaying 576 lines of the TV picture at any one time, only half that number.
Anything with a "p" after it means progressive. This means it DOES display that number of lines on the screen, so 480p actually displays 480 lines. Same goes for 720p, 1080p.
