Xbox 360 core
Looking to get the kids an Xbox 360 for xmas and notice the core system is markedly cheaper than than the other types. Apart from not having a hard drive, can the core system do everything else that the other systems do? And what exactly would they be missing out on (xbox wise) by not having the hard drive version?

If you're planning on connecting and playing online then without the hard drive you wont be able to download any of the playable demos/videos or downloadable extra game content.
As for game saves they are supposed to fit on a memory card, however a few of my saves are bigger.
You can always look at getting the Hard drive at a later date, people are trading the 20gig in for the 120s so either ebay or places like gamestation should have 2nd hand drives reasonably cheap.

The downloadable arcade games, software patches and a decent amount of savegame space - some games stipulate that a HDD is required.
HDD is also required for backwards compatability.
Core also comes with a wired rather than wireless controller.

256mb is still a bit pitiful though - most of the best games out there have DLC which is usually upwards of 500mb...and from memory the BioShock demo was 1.3gb.
Basically Daveo - get a HDD, you'll definately get the use out of it.
