It's a different way of writing a disc at the disc level.
A bit like what you'd have if VHS and betamax videos had both used the same sized case to house the spools of tape.

DVD+R gives you more features.
DVD-R should work in all video DVD players
Thus if you want compatability go -R, but for flexibility go +R.
I believe that physicaly both disks are the same :notsure:
