They are an absolute bugger to fly.. the trick is to be real real gentle with the controls...

X button accelerates, then the analogue stick up lowers altitude and analgue stick down raises altitude.
Use the same analogue stick to bank the plane left and right..
O button destroys the aircraft..

Practice practice practice is the key with this one...

Its the same with flying the full sized sea plane. Practice makes perfect.

Small movements with the direction controls, keep throttle on full most of the time as they seem to take ages to pick up speed once you slow down.
