Can someone please tell me how to stop the shortcut menus in office?

Or better still the address of the hippy who thought it was a good idea?

If you mean Autocomplete/Autoformat (where you start typing something and Word offers to finish it for you) then look on the Tools Menu for AutoCorrect Options.

If it's the way Word etc hide the menu options you haven't used for a while, it's Tools > Customize > Options > "Menus show recently used commands first"
