having recently borrowed a mate's copy of GTA3 : Vice City, only to discover it had an excellent 5.1/DTS soundtrack .. I wondered if it was the first, or if there are more lurking ?

Not the first - there's loads.
Playstation2 has had dolby 5.1 capability from day one.
Maybe's the dolby site could list all the PS2 games that use it?
X-Box and GameCube do 5.1 also.
