Recommended widescreen display adaptors

per the title...

any recommendations for display adaptors (for PC) supporting either

1280x768

or 1280x720?

Depends on what you want to do?

1280x768 are supported on most, if not all decent graphics cards.

Oh, and yes, with the right drivers (such as NVidia Detonator stuff) then most things will do 1280x720, which is a nice 16:9 aspect ratio. I assume that your thing uses square pixels?
