Chip protection will only come from lacquering them; no car care products will protect against chipping. Once all the paintwork is done, I would protect them regularly with Poorboy's Wheel Sealant to protect against the harmful effects of brake dust and make them easier to keep clean. Not sure what you need to do in terms of pre-painting preparation, hopefully someone else with spraying knowledge can help.
