Default removing EX-P and natty paste for repair.

About 2 weeks ago I did a Poor Boys marathon with ssr2, pro polish, EX-P sealant then Natty's Paste.

I have now got a chip on the door edge and a scratch on the bumper that I would like to fix. What should I do to remove the sealant and wax before applying touch up paint, just use some panel wipe?

Secondly do I have to remove the wax and sealant from the whole panel before applying more EX-P and another coat of natty's or can I just put the EX-P straight over what's already there? (obviously washed first!)

Use Panel Wipe over the whole panel to strip it back to bare paint, do the work, then redo the whole panel with the EX-P then Natty's - this will ensure you don't end up layering sealant over wax, which is a no no.
