Most carbon fibre bonnets I've come across have been lacquered (compared to spoiler tips, etc, which always seem to be bare), so I would treat them the same as paint, albeit more gently with the polisher. A coat of a quality sealant methinks.
The carbon parts I have started to haze and mist using Meguiars NXT shampoo. I now wash the paint with this and then wash the carbon seperately with a general cleaner from a superstore eg. Cillet Bang etc.
Tried using Megs Gold Class wax for protection but even with a very thin coating it mists after a few days, I have no idea why. I still get a good shine with just a clean though.
